Since planting our first vines in 2006, we’ve been a growing family business, with roots to the land going back 7 generations. We pride ourselves on being a boutique English wine brand, producing vintage sparkling wine from fruit grown on our 2,500 acre estate, located high on the North Downs at the gateway to the Garden of England.

Our family motto, Licet Esse Beatis, is at the heart of all we do across the estate, to enjoy life’s simple pleasures with friends and family, through delicious food and wine. Chef de Partie

our Business:

We pride ourselves on our excellent hospitality from our two AA Rosette award-winning restaurant and are looking for someone to join our team as a Chef de Partie on a full-time basis.

‘Licet Esse Beatis’ sits above our front door at Squerryes Court. It means ‘permitted to be joyful’ and we have been in the business of creating joy for nearly 300 years.

We are a boutique English wine brand, producing vintage sparkling wine from fruit grown on our 2,500 acre Estate. Located high on the North Downs, our vines grow on a pure white chalk seam fed by a mineral rich aquifer nestled deep below the spiritual Pilgrim’s Way. We released our first vintage in 2014 and launched our tours and tastings in 2019.

Our restaurant is open Wednesday to Sunday, offering a la carte dining, tasting menus, Sunday roasts, private dining and events.

Job SUMMARY

We are looking for a talented, forward-thinking Chef de Partie with at least three years of high-quality kitchen experience, or someone who is looking to take that next step up to join our team. The ideal candidate is someone who thrives on working in a team, has a passion for cooking, and an understanding of our values and ethos. They will be focused on delivering the best experience possible for our guests and are eager to learn and challenge themselves.

This role is crucial in the smooth running of the kitchen. You’ll be working with other members of the team and ensuring the very best use of the produce and preservation techniques that we use. You need to be creative and have an impeccable attention to detail.

The salary is a package of up to £13 per hour with a maximum of 48 hours per week.

The ideal candidate will have:

  • A mature outlook, quality driven, with impeccable attention-to-detail
  • Excellent communication and organisational skills
  • A friendly and approachable manner
  • A genuine passion for the hospitality industry, the role and taking on responsibilities
  • Ability to ensure the smooth-running of the kitchen, working closely with the senior chefs to execute instructions
  • Have a high standard of food preparation skills, attention to detail, portion control and minimal wastage
  • Skills to assist the senior chefs, where required, in recipe and dish development
  • Organisation skills and be able to maintain high standards of a 2 AA rosette kitchen
  • Ensure high levels of health and safety standards plus cleanliness of kitchen and all associated equipment  
  • Deliver an exceptional experience for our guests from the kitchen and in the dining room
  • Carry out any other duties reasonably requested by a member of the management.

Senior Sous Chef

Job SUMMARY

We are seeking a talented and passionate Senior Sous Chef to join our culinary team. The ideal candidate will assist in the management of kitchen operations, ensuring high-quality food preparation and presentation. This role requires strong leadership skills and a commitment to delivering exceptional hospitality in a fast-paced restaurant environment.

Duties:

  • Assist the Head Chef in overseeing daily kitchen operations, ensuring efficient workflow and adherence to health and safety standards
  • Help with food preparation, including chopping, cooking, and plating dishes to meet menu specifications
  • Supervise kitchen staff, providing guidance and support to ensure tasks are completed effectively and efficiently
  • Maintain high standards of cleanliness and organisation within the kitchen area
  • Collaborate with the culinary team to develop new menu items and enhance existing recipes
  • Monitor inventory levels and assist with ordering supplies as needed
  • Train new kitchen staff in food preparation techniques and safety protocols
  • Foster a positive team environment through effective communication and leadership

Qualifications:

  • Proven experience as a strong Junior Sous Chef or Sous Chef in a similar role within the hospitality industry
  • Strong culinary skills with a passion for food preparation and presentation
  • To be able to help with menu development with as the seasons change
  • Excellent team management abilities, with experience supervising kitchen staff
  • Knowledge of various cooking techniques, ingredients, equipment, and procedures
  • Ability to work under pressure in a fast-paced environment while maintaining attention to detail
  • Strong leadership qualities with the ability to motivate and inspire team members
  • A relevant culinary qualification is preferred but not essential

Coffee Shop Supervisor

Job SUMMARY

We are looking for a pro-active person to run our coffee shop, which in the summer months operates from the Vineyard Café and in poor weather plus the winter months, from the indoor Tasting Bar. The ideal candidate is someone who thrives on working in a team but is confident to work alone, has a passion for coffee, and an understanding of our values and ethos. They will be focused on delivering the best experience possible for our guests and are eager to learn and challenge themselves.

The salary will be based on experience and we are looking for someone with a minimum of a year's worth of coffee-making experience.

Main Duties:

  • Maintaining stock levels by replenishing displays and fridges
  • Handling customer enquiries
  • Operating tills and processing orders- no cash handling required
  • Maintaining standards around product quality and store cleanliness
  • Preparing and serving a variety of hot and cold beverages, including coffee, tea, and specialty drinks
  • Taking customer orders accurately and efficiently
  • Operating espresso machines, grinders, and other coffee equipment
  • Assisting with food preparation and presentation as needed
  • Following recipes and ensuring consistency in beverage preparation
  • Ensuring the cleanliness and organisation of the coffee bar area
  • Maintaining stock levels of coffee beans, syrups, milk, and other supplies
  • Providing excellent customer service by greeting customers with a smile and engaging in friendly conversation
  • Upselling additional products or menu items to customers
  • Adhering to food safety guidelines and maintaining proper hygiene standards
  • Clearing tables
  • Ability to operate cleaning equipment.
